What's Cookin'? Grilled Pizza

If you haven't tried this yet, you should!

My sister and her husband came over for dinner the other night. She asked what we should have–I suggested pasta with seafood sauce. Well, my brother-in-law is now engulfed in the cross-fit craze so apparently big pasta dinners are out.

That marked the end of my ideas so when Peppy (her real name is Steph, but if you know her, you'll understand where the nickname comes from) called from the grocery store and suggested grilled pizza, I said, "Why not?"

As in "Why not?" I don't have anything else I can pull together because I seriously still have not gone grocery shopping. "Why not?" Because I don't have to think about doing anything if you're at the store. And "Why not?" I mean she's only nine months pregnant–why shouldn't she be making me dinner?!?

At this point, you're probably pretty happy you've never been invited over for dinner as she ended up coming up with something for us to eat, going to the store and bringing everything we needed! 

I've seen a bunch of people post pictures of grilled pizza on their Facebook pages and the idea intrigued me, but never enough to figure out how to do it.

Turns out it's amazingly simple. All you need is flatbread, pizza toppings and a grill. It was amazingly delish! So thanks to Peppy and Dean for dinner! And bring on that baby already!

Quick Fix

What You Need

  • Flatbread
  • Olive Oil
  • Sauce
  • Cheese
  • Pizza toppings of choice (we had Canadian bacon and pineapple one one and spinach, tomato and artichoke hearts on another–yum!)

What to Do: Brush the flatbreads with olive oil on both sides. Grill for three minutes on each side. Add your toppings. Grill until the cheese melts.
